Job Summary
The Director, Food & Beverage is responsible for providing leadership over the performance of the Food & Beverage operation, ensuring an exceptional guest experience while achieving the resort’s business objectives. They will oversee the success of seven distinct Food & Beverage concepts—Akira Back, The Landing, The Lounge, Wildwood, Dear Josephine, Moonshack, and In-Room Dining—in addition to Banquets. This individual will provide strategic direction to the Food & Beverage team to cultivate service excellence, optimize operational efficiency, maintain financial controls, and drive revenue growth across all Food & Beverage outlets.
Key Duties & Responsibilities
Leadership Direction:

Provide strategic leadership for the resort’s Food & Beverage operation, overseeing seven distinct concepts

Lead the day-to-day operation of all Food & Beverage outlets, ensuring the consistent execution of luxury hospitality standards

Ensure all Food & Beverage operations adhere to established resort standards, policies, and procedures

Maintain a visible leadership presence throughout the resort, remaining accessible to guests, colleagues, and leaders

Conduct regular operational reviews and spot checks to improve service, cleanliness, presentation, and product quality

Ensure appropriate staffing and coverage across all outlets, particularly during peak occupancy periods, high-volume service times, and special events
Service Management:
-
Champion an elevated, personalized, and intuitive guest experience across all outlets

Ensure prompt, efficient, and discreet service within established service time parameters across all outlets

Develop systems to capture, communicate, and consistently deliver on individual guest preferences, dietary allergies, dietary restrictions, and service expectations

Monitor guest feedback, satisfaction, and service trends, implementing appropriate strategies to address opportunities to enhance the guest experience

Maintain strong relationships with guests, addressing concerns and identifying recovery opportunities

Partner with outlet leaders, the Culinary team, and other departments to plan and execute banquets, special events, private functions, and resort-wide activations

Coordinate between Food & Beverage operations and other departments to ensure the seamless execution of events

Ensure all Food & Beverage outlets comply with applicable health, sanitation, safety, and other local and federal regulations
Menu Development:

Collaborate closely with the Executive Chef and outlet leaders on menu development, seasonal offerings, specials, and presentation

Ensure menus reflect the resort’s luxury positioning, guest preferences, and market trends

Monitor product availability, working with the Culinary and Purchasing teams to order items and resources required

Ensure all food, beverage, and other inventory is properly stored, secured, rotated, and maintained in accordance with applicable requirements
Financial Oversight:

Manage the Food & Beverage annual budget in partnership with the Resort Manager and Finance team, aligned with the resort’s business objectives

Analyze labor costs, food & beverage costs, revenue, profitability, and other key financial indicators
-
Develop strategies to maximize revenue, optimize profitability, and improve efficiencies
-
Maintain effective controls over all Food & Beverage accounts, cash handling, inventory, and departmental expenses
-
Maintain appropriate controls over discounts, promotions, complimentary items, voids, and other financial adjustments in accordance with established policies
-
Develop Food & Beverage promotions and revenue-generating initiatives in partnership with the Commercial team

Monitor menu performance, including sales trends, well-performing and underperforming items, pricing, and profitability, making recommendations accordingly

Elevate product selection to ensure quality, availability, and value

Build strong relationships with purveyors, vendors, and suppliers, with an emphasis on local sourcing opportunities
People Management:

Play a key role in the Food & Beverage talent strategy, including workforce planning, recruitment, interviewing, selection, onboarding, training, and retention

Lead, coach, and develop Food & Beverage leaders and colleagues, fostering a high-performance culture centered on professional growth

Address performance and conduct concerns promptly in partnership with Human Resources

Ensure all colleague-related actions are consistent with company policies, employment laws, and established disciplinary procedures
Other:

Perform additional responsibilities as assigned by the Resort Manager or other members of management
Skills, Experience, & Educational Requirements
-
Bachelor’s degree in Hospitality Management, Business Administration, or a related field preferred
-
Minimum of 7–10 years of progressive Food & Beverage leadership experience required
-
Previous experience leading multiple Food & Beverage outlets in a luxury hotel or resort operation, including restaurants, bars, and banquets, required
-
Proven success in delivering exceptional guest experiences while maintaining the highest standards of operational excellence
-
Excellent verbal and written communication skills, with the ability to effectively interact with guests, colleagues, leaders, ownership, vendors, and other internal and external stakeholders

Highly organized, resourceful, and solutions-oriented, with exceptional decision-making and problem-solving capabilities in a fast-paced, high-touch environment

Strong financial acumen, with demonstrated experience managing budgets, forecasting, labor costs, food & beverage costs, and profitability

Proficient in Microsoft Office Suite and relevant hotel, point-of-sale, and financial systems

Ability to collaborate with executive leadership and cross-functional departments to achieve property-wide operational and financial objectives

Ability to recruit, develop, coach, and retain high-performing Food & Beverage teams while fostering a culture of accountability

Physical Requirements
The ideal candidate must be able to perform all physical requirements of the job in a safe manner, with or without reasonable accommodation. Physical requirements include, but are not limited to:
