Commercial Manager - Butchery

ROLE SUMMARY

The Commercial Manager - Butchery is responsible for leading the commercial strategy for the Butchery category, including Fresh Meat, Poultry, Processed Meat, and Value-Added Meat products. The role drives sales growth, profitability, sourcing excellence, supplier partnerships, category innovation, and product quality while ensuring freshness, availability, food safety compliance, and an exceptional customer experience across all stores.

ROLE PROFILE

• Develop and execute the commercial strategy for the Butchery category to achieve sales, margin, and growth objectives.
• Manage category assortment, pricing, promotions, and seasonal plans to meet customer demand and business targets.
• Build and maintain strong relationships with local and international suppliers to secure high-quality products and competitive commercial terms.
• Lead supplier negotiations, annual trading agreements, investment plans, and promotional funding initiatives.
• Monitor category performance, including sales, gross margin, waste, shrinkage, stock availability, and inventory turnover.
• Ensure all meat and poultry products comply with food safety, quality, halal, and regulatory standards.
• Collaborate with Supply Chain, Operations, Quality, and Store teams to optimize product availability and operational execution.
• Analyze market trends, consumer preferences, and competitor activities to identify opportunities for growth and category innovation.
• Drive the development of value-added products and premium ranges to enhance customer experience and category profitability.
• Ensure category plans align with business objectives, customer expectations, and market opportunities.

REQUIREMENTS

• Bachelor's degree in Business Administration, Commerce, Food Science, Agriculture, Supply Chain, or a related field.
• Minimum 5-7 years of experience in Commercial, Category Management, Buying, Merchandising, or Procurement roles within Butchery, Fresh Food, Retail, Hypermarkets, Supermarkets, or FMCG.
• Strong knowledge of fresh meat, poultry, sourcing practices, supplier management, and market dynamics.
• Proven experience in commercial negotiations, category planning, pricing strategies, and promotional management.
• Strong understanding of food safety standards, quality assurance processes, and regulatory requirements related to fresh meat products.
• Strong analytical skills with the ability to evaluate sales performance, margins, waste, and inventory metrics.
• Excellent communication, stakeholder management, and leadership skills.
• Advanced proficiency in Microsoft Excel and commercial reporting tools.
